Durum wheat is the hardest variety of wheat, the gold standard used in authentic Italian pasta. It is naturally high in protein, low in starch, and holds its shape and bite when cooked — which is why PILATO pasta does not turn mushy.
All PILATO pasta, vermicelli, and wheat products are 100% vegetarian. The pasta itself (durum wheat + water) is vegan. The included masala sachet is also vegan.

Most grocery pasta in India is made from maida or a maida-wheat blend, with added colour for the golden look. PILATO is 100% durum wheat with no maida, no preservatives, and no added colour. The golden hue is the wheat. Plus, PILATO is bronze-drawn (rough texture holds sauce) and slow-dried (preserves protein and bite).
PILATO is real pasta, not instant noodles. Real pasta from 100% durum wheat takes 8–10 minutes to cook. Instant noodles are typically maida-based, deep-fried, with preservatives and a flavoured powder.
Boil 1.5 litres of water with 1 tsp salt. Add 200g pasta. Cook 8–10 minutes for al dente (firm bite). Drain. Toss with the included PILATO masala sachet and a drizzle of olive oil or ghee. Add veggies, paneer, or a fresh tomato base if you like.
For upma: dry-roast 1 cup vermicelli (skip if using roasted vermicelli), pour into 2 cups boiling water with veggies and tempering, cover 5 minutes. For kheer: simmer vermicelli in milk with sugar and cardamom until soft.

No. PILATO products contain zero preservatives, no artificial colours, no artificial flavours. Slow-drying makes the products naturally shelf-stable.
Bronze-drawn means the pasta dough is pressed through bronze dies (instead of modern Teflon dies). Bronze creates a slightly rough surface on the pasta, which holds sauce far better than smooth Teflon-drawn pasta. It is the traditional Italian method.

Pasta and vermicelli are shelf-stable for the duration printed on the pack (typically 12–18 months from manufacture). Store in a cool, dry place.
